What is special about this course?

This one year programme is for those who wish to train and practice developing kitchen skills within the college's Food Court, a real working environment, and our award winning fine dining restaurant, which sets high standards of customer service and delivers excellent food to members of the public.  You will gain practical hands on learning experience on how to plan, cook and present various styles of menus from between 20 and up to 400 covers and develop your initiative and coaching and leadership skills to be 'work ready' on successful completion of your course.  The content covers a wide range of competency based practical units with embedded underpinning knowledge.  You will also enjoy working in partnership with local suppliers and employers including Sodexo.  The course is very practical, so if you are hard working and want to learn more, then it will provide the qualification you need.

Entry requirements

Applicants should have Core Skills at Int 2/National 5 in Communications, Numeracy and IT.  You should have SVQ Level 2 in Professional Cookery.  You will also be invited to attend an interview and practical skills test.

This qualification gives you a good grounding to be employed within the hospitality industry and includes:

  • Production Cookery like complex meat, poultry, fish, sauces and dressings, vegetables, bakery and pastry dishes

  • Intermediate and Worldhost Principles of Customer Service

Students on part-time courses may also be eligible to have their course fees waived.

What can I do on completion of my course?

You may apply to progress to HNC Professional Cookery or Hospitality.

You will likely progress into full-time employment within the hospitality industry.  Considerable and varied job opportunities within the kitchen are available throughout the exciting and expanding hospitality industry both locally, throughout the UK and worldwide.  With the necessary industrial experience you could also expect to find work as a senior chef de partie, junior sous chef or sous chef in one of Scotland's many high quality eating establishments.
