When John left school he worked in kitchens until he joined the RAF. He left the RAF and went back to the hospitality industry and worked his way up to Silver Service Waiter. However, after getting married and having children, John left the trade to spend more time with his family.

“My wife Jemima came to college a couple of years ago on a return to learn course. Then last year she did the Professional Chef Level 2 course. I attended the Hospitality Awards and saw all the certificates and accolades that Jemima had won. I suddenly thought, 'Maybe I could do that'. So I got brave and applied to come to college. I couldn’t have done this without the support of my wife. She’s amazing! When I had my interview with Rhona McLuskey, I said 'I know I have a tough act to follow in Jemima'. I think I got close to achieving that as we’re both up for awards!

“The lecturers have been awesome! The help and support I’ve received over the last year. And the positive feedback they give is a great boost.

“Just being on this course has already got me a new job. I have just secured a position at Fonab Castle, a 5* Hotel. I’ve still got much to learn, but they are very happy for me to continue my studies, and enhance my current knowledge and skills set.

“The rewards are worth every second of work you put into it. The more effort you put into your work the more you can achieve. My only regret is I wish I’d done this sooner!”
